2 T olive oil

1 t minced garlic
3 C cooked wild rice &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp;&amp;nbsp;
&amp;frac12; C dried cranberries

2 T lemon juice
&amp;frac12; C water or broth
&amp;frac14; t pepper
1 C walnuts, toasted and chopped &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp;&amp;nbsp;

Saute the first 5 ingredients until tender. Add to the next three to the skillet and saute for 5 min. Add the remaining four things to the skillet, heat through, adjust
seasonings if desired. &amp;nbsp;Pour into greased serving pan, cover and keep warm until serving. &amp;nbsp;We also used a crock pot on low to not only cook the wild rice but also to keep the finished dressing warm until dinner.

    <description>3 C &amp;frac34; inch cubed sweet potatoes (1 &amp;frac12; lb)
1 C chopped red onion
2 T olive oil
1 t seasoned pepper
6 bacon sliced, cooked and diced (optional)
&amp;frac14; C chopped fresh parsley
2 C (8 oz) shredded Swiss cheese
1 &amp;frac12; C half and half
4 eggs
1 t chopped fresh rosemary
&amp;frac12; t salt

1 pie crust (also optional)

Toss the first 4 ingredients together, spread on baking sheet in single layer and bake at 425 until potatoes are tender, ~ 20 min. &amp;nbsp;Cool, toss in bowl with bacon, parsley, and cheese. &amp;nbsp;Pour into greased pie pan (with or without crust). Mix eggs and cream thoroughly, pour over filling. &amp;nbsp;Bake at 350 for 40-60 minutes or until set. &amp;nbsp;Should pass clean knife test.

In a large saucepan with lid, saute onion in oil until tender.&amp;nbsp; Add rice, cook and stir for 2 minutes.&amp;nbsp; Add broth and water, bring to a boil, cover and simmer for 15 min.&amp;nbsp; Stir in spinach, salt and pepper and stir until spinach is wilted.&amp;nbsp; Pour into a greased baking dish, sprinkle with Parmesan, cover with foil, and bake at 375 for 30 min.&amp;nbsp; Should serve 8-10.

Saute the onions in the oil until tender. &amp;nbsp;Turn off the heat, add the remaining ingredients to the skillet so that the peas warm up. &amp;nbsp;When the quinoa is done, dump it into the skillet, stir well and serve.

This will serve about 8.

1 small onion, diced
1 T olive oil
Saute until tender.
&amp;frac12; C chicken broth
&amp;frac12; C dried cranberries
&amp;frac14; t salt
Add, bring to a boil, reduce and simmer 5 min.
1 &amp;frac14; C uncooked orzo, cooked and drained
Stir in, heat through
&amp;frac12; C chopped walnuts
&amp;frac14; C parmesan
Stir in and heat through just before serving.

1 T olive oil&amp;nbsp;&amp;nbsp;&amp;nbsp;
Saute until tender
5 C cooked rice
2 C white beans, rinsed
&amp;frac14; C sliced black olives
2 C shredded cheddar
1 C fat free cottage cheese or ricotta
&amp;frac14; C fat free sour cream
1 &amp;frac12; t chili powder
1 C salsa
Combine all, pour into baking dish, bake at 350 for 45 min or until heated through.
